My Granny used to make a fresh apple cake. I've looked through much of the papers and such that I have of hers, but I have not run across her recipe for it yet.
Here's one that is easy to make when you want a tasty yet simple dessert.
Easy Apple Cake
Ingredients:
2 cups sugar (divided)
3 tsp baking powder
1 egg
pinch of salt
1 cup all-purpose flour
1/2 cup milk
2 tsp vanilla
2 cups chopped apples
1 Tbsp cinnamon
1 stick butter, melted
Directions:
For batter, blend together 1 cup sugar with the baking powder, egg, salt, flour, milk and vanilla. Pour this into a greased and floured 9x13-inch baking pan.
Sprinkle apples over batter in pan. Sprinkle cinnamon over apples.
Mix melted butter and 1 cup sugar. Pour butter mixture over apples.
Bake at 325°F for about 40 minutes (cake tester should come out almost clean).
Frost (if desired) with a caramel or cream cheese frosting.
12 servings.
The cake would also be good with a streusel topping.
Mix together 1/2 cup soft butter, 1/2 cup sugar, 1/2 cup brown sugar, 2/3 cup flour, 1 tsp cinnamon, 1/2 tsp nutmeg. Sprinkle over apples (omit cinnamon from main recipe if using streusel. You might need to add about 5 minutes to the cooking time.
