Deviled Eggs - I love them even though I hate boiled eggs. I also love egg salad ~ not often ~ but from time to time, I make these for a party
or for lunches. Since we'll all be eating a bit more due to the holidays, here's a lighter version.
Spicy Stuffed Eggs
Ingredients:
6 large eggs, hard boiled
1 green onion, finely chopped
1 Tbsp low-calorie mayonnaise
1 Tbsp finely minced parsley
1 Tbsp dill
2 sweet gherkins, finely chopped
1/2 tsp Dijon mustard
1/8 tsp salt
1/8 tsp black pepper
Paprika -OR- Parsley (for Garnish)
Directions:
Peel eggs; halve lengthwise.
Place yolks in small bowl. With a fork, mash yolks, mix in onion, mayo, parsley, dill, pickles, mustard, salt, and pepper. Mound into egg white halves.
Sprinkle with paprika or garnish with parsley. Cover loosely and refrigerate until ready to serve.
Makes 12 halves.
