The western part of Kentucky is known for a dish called Burgoo.
It's very similar to recipes for Brunswick Stew. Here's an old recipe for Brunswick Stew that I recently updated.
Old Brunswick Stew (original recipe)
Ingredients:
1 pint frozen butter beans
1 quart canned tomatoes
1-15 oz can whole kernel corn
3 medium potatoes, diced
1/4 tsp hot pepper
1 small onion, chopped
Salt and pepper to taste
1 small chicken, cut up and broth
Directions:
Boil cut up chicken until tender. Reserve broth. Cut chicken into bite sized chunks. Combine all ingredients in crock pot. Set on low temperature and cook several hours. The longer the stew simmers the better it tastes.

Brunswick Stew
Ingredients:
1 rotisserie chicken from the deli
1/2 pound smoked sausage or kielbasa, cut into chunks
16 oz bag frozen baby limas
2 - 14.5 oz cans diced tomatoes
1 1/2 cups frozen corn kernels
3 medium potatoes, diced
1 onion, diced
1 bell pepper, seeded and diced
salt and pepper
3 - 4 cups chicken broth
Directions:
Remove meat from chicken, discarding skin and bones.
Cut into chunks and place into bottom of slow cooker.
Add remaining ingredients and cover.
Cook on LOW for 7-9 hours.
Serve in bowls with a crusty loaf of bread and a nice green salad.
