Warm comforting soup, who doesn't like walking in from work
with most of your meal waiting for you to just finish it up before eating?
Potato Soup
Ingredients:
6 potatoes, peeled & cut into bite sized pieces
2 onions, chopped
1 carrot, pared & sliced
1 stalk celery, sliced
2 tsp chicken base (or granules)
1 Tbsp parsley flakes
5 cups water
Dash pepper
1/3 cup butter or margarine
2 - 12 oz cans evaporated milk
Directions:
Put all ingredients except milk in crock pot.
Cover and cook on low 10 to 12 hours (or High 3 to 4 hours).
Stir in evaporated milk during the last hour.
Before serving, you can puree soup using a blender, food processor or imersion blender, if desired, or you can leave it chunky.
Note: Feeling lazy? That's OK - take a 2 pound bag of frozen cubed hash browns and thaw before using in this recipe.
