I love beef and noodles. It's a great comfort food. Here's my version.
Beef and Noodles
Ingredients:
2 pounds chuck eye roast
1 Tbsp oil
1 envelope onion soup mix
1 1/2 cups beef broth
8 oz sliced white mushrooms
small amount of cold water
2 Tbsp corn starch
Hot cooked egg noodles
Directions:
Slice beef into small pieces. Brown beef lightly in oil before placing into slow cooker. Sprinkle with onion soup mix, pour over broth and add in mushrooms. Cook on LOW for 4 - 6 hours or until beef is tender.
Turn slow cooker to HIGH for 15 minutes. Blend water and corn starch into a slurry, pour into beef and broth, stirring to combine. Cook uncovered on HIGH for 15 minutes or until gravy has thickened.
Serve over cooked noodles.
