Happy birthday to me.
It's times like this, holidays, birthdays, just because days, when I miss my Mom most. When I ran across this recipe, I thought that she would have liked this dip, since I remember she loved deep fried vegetables such as cauliflower, squash, mushrooms and more.

Caramelized Onion Dip
Ingredients:
1 Tbsp butter
1 med onion, peeled and sliced
2 Tbsp apple cider vinegar
1 Tbsp molasses
1 Tbsp dijon mustard
1 c mayonnaise
salt and pepper to taste
Directions:
Melt butter in a frying pan over medium heat and add sliced onions. Cook stirring occasionally until the onions are soften and caramelized. Remove onions from the heat and add vinegar.
Place the onions and vinegar into a food processor. Add the molasses and mustard - process until smooth. Add mayonnaise and salt and pepper to taste, process to combine all together.
Pour mixture into a bowl, cover and refrigerate until ready to serve. Serve with fried squash or zucchini, mushrooms, cauliflower.
Makes 1 1/2 cups of dip.
Want it a bit zippy? Add 2 packets of that horseradish sauce from the roast beef place and stir well.
