It's Halloween! Cue spooky music. The second (or maybe even third) most popular day where kids all over the place go into sugar overload (behind Easter and maybe, Valentine's Day).
Here's a sweet treat that is easy to create. The hardest part is rolling them into balls. A lady I know calls them Skillet Cookies. While they really don't remind me of cookies per se, since they aren't baked, they do disappear rather quickly.
Skillet Cookies
Ingredients:
1 stick butter (no subs)
1 cup sugar
1 egg, beaten
1 cup chopped nuts (any will do, but I like pecans or cashews)
1 cup chopped dates
2 cups crispy rice cereal (you know which one)
Directions:
Mix the first six ingredients in a skillet and bring to a boil. Boil 5 minutes while stirring continuously. Remove from heat and cool for about 3 minutes. Add cereal, mix well and form into balls (slightly bigger than marbles). Roll balls in powdered sugar or flaked coconut.
Variation:
Use the chocolate version of the crispy rice cereal for a different taste.
