I love making breakfast casseroles - one, they're easy, two, they give me time with family or whomever I am cooking for and three, they travel fairly well (like to work or potluck brunches).
This one is a three meat, onion, mushroom and pepper version; similar in nature to a supreme style pizza, without the dough and pizza sauce. Feel free to make a few changes or substitutions to suit your tastes. Mmmm - enjoy!
Brunch Casserole Supreme
Ingredients:
4 cups frozen cubed hash browns
1 lb bulk pork sausage, cooked & drained
1/2 lb bacon, cooked & crumbled
1 1/2 cups ham, diced
1 medium green pepper, diced
1 medium onion, diced
8 oz sliced mushrooms
2 1/2 cups shredded cheese (divided)
6 eggs
2 cups buttermilk
1/2 tsp salt
1/4 tsp pepper
Directions:
In a large bowl, toss the hash browns, sausage, bacon, ham, green pepper, onion, mushroom, and 1 cup cheese together.
Transfer to a greased 13-in. x 9-in. baking dish.
In another bowl, whisk the eggs, buttermilk, salt and pepper; pour over the top. Sprinkle with remaining cheese. Cover and refrigerate overnight.
Remove from the refrigerator about 30 minutes before baking. Bake, uncovered, at 375° for 30-35 minutes or a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.
Yield: 8-12 servings.
