Low calorie, whole grain and tasty, too! This salad makes a nice lunch if you add about 3-4 ounces grilled white meat chicken to each serving. Something to keep in mind; there are as many varieties of curry powder as Carter had liver pills. Depending on your palate's sophistication, you can use a hot curry powder or not. It's all up to your individual taste.
Ingredients:
2 cups cooked brown rice
1 cup frozen peas, thawed
3/4 cup chopped onion (cooked in a sauté pan until tender)
2-3 tsp curry powder
Directions:
Mix all together and chill for a couple hours. For the best flavor, make the day before serving.
