I love carrot raisin salad even though I am not a huge carrot fan. On Sundays after church, Mom and I used to go to a place called the Blue Boar in Louisville and it was a huge treat to grab an order of the carrot and raisin salad.
The Blue Boar was set up cafeteria style. You would grab a tray and go through the line, you start with salads, then came soups, breads, desserts, vegetables, entrees (meats) and finally beverages. The cashier would ring up your total and you would go to a table and eat your meal. Then you paid on the way out the door. It was almost like you were trapped until you paid your bill, but it was a nice place.
I had not had the salad in a long while until I happened to be in a Chick-fil-A and found that they have it. Yay!! I guess I love it because it's sweet due to the carrots and pineapple. No matter why I like it, I like to stir up a batch several times a year.

Directions:
Place carrots, pineapple and raisins in a large bowl. In a small bowl, combine the mayonnaise and sugar, then pour over carrot mixture. Toss to coat. Chill for 4-6 hours. Tastes better the next day, too.
Yield: about 8 servings.
