Strawberries and Cream - summertime's most definitive combo is dressed up with drizzled chocolate. This can be served chilled or as a frozen dessert. Here's an easy treat that you can make ahead for later.
Ingredients:
1 - 9 inch pie crust, unbaked
8 oz cream cheese, softened
1/3 cup sugar
1/2 tsp pure vanilla extract
1 cup heavy whipping cream (whipped)
1/2 cup semi-sweet chocolate chips
4 cups freshly hulled strawberries
1 Tbsp shortening
Directions:
Prepare pie crust according to directions for unfilled one crust 9 inch pie pan. Prick crust all over and bake at 425° F for 9-11 minutes.
In a chilled metal mixing bowl and using the wire whisk attachment for your mixer, whip cream to almost stiff peaks. Set into refrigerator to remain chilled.
In another large mixing bowl, beat cream cheese until fluffy. Add sugar and vanilla, blend well. Fold in the whipped cream. Spoon into cooled pie crust and smooth the top. Arrange strawberries pointed side up over filling. Chill.
In small saucepan over low heat melt chocolate chips and shortening, stirring. Drizzle chocolate over strawberries and filling. Chill until set. Pie can also be served as a frozen dessert.
