Grilled Chicken - the quintessential Fourth of July staple (not counting fried chicken). Here's a way to grill it up with some great flavor.
Ingredients:
1/2 cup pure maple syrup
2 Tbsp Dijon mustard
3 Tbsp balsamic vinegar
1/2 cup canola oil
1 tsp coarsely ground pepper
1 chopped garlic clove
4 to 6 boneless skinless chicken breasts (pound to equal thickness for even cooking)
Directions:
Mix together all ingredients except chicken. Place the chicken in a shallow glass dish. Coat the chicken with the mixture and marinate in the refrigerator for 4 - 6 hours or so. Grill the chicken over medium high coals for 5 to 7 minutes per side. Be sure to check internal temperature to ensure doneness.
Add some cole slaw, potato salad and some whole-grain rolls for an all-American meal.
