Normally, I don't like cabbage - or at least, not the mushy, smelly, boiled cabbage like I grew up with. But change up the cooking method, add some other ingredients and mmm - you've got a tasty dish.
Sauteed Cabbage with Bacon
Ingredients:
5 - 6 slices of thick cut bacon, diced
1 large sweet onion, diced
1 large head of cabbage, cored and shredded
Salt & Pepper
Directions:
In a large deep skillet, over medium-high heat, cook bacon until crispy. Remove cooked bacon from pan, leaving rendered grease. Add onions and sautee for 2- 3 minutes. Add cabbage and toss to coat with the bacon grease. Sprinkle with salt and pepper. Continue cooking for about 10 more minutes or so, making sure to toss the cabbage frequently so it won't overcook. You want it to be tender, but not mushy. Add back the cooked bacon and toss everything together. Transfer to serving bowl.
This also works nicely with halved brussels sprouts.
