My hubby loves cabbage rolls - his heritage is Eastern European - but I really have issues making them from scratch - the time, the trouble, the sheer tediousness! SO, to that end, I saw this on a TV show, and of course, I didn't write it down. I came up with the following and it works. No, it's not exactly cabbage rolls, but if you want the flavor of them, this is a very good substitute.
Un-Stuffed Cabbage Roll Casserole
1 lb lean ground beef (or turkey)
1 cup diced onion
2 tsp minced garlic (2 cloves)
1 - 1 1/2 lb chopped cabbage (I use a pre-shredded slaw mix)
1 - 1 1/4 cup long grain rice
1/4 tsp pepper
22 - 26 oz jar pasta sauce (something on the plain-ish side like garlic & onion)
1 1/2 cups shredded mild cheddar cheese (optional for some)
Directions:
Preheat oven to 350° F.
Cook beef in a skillet with onion and garlic until no longer pink. Drain any grease. Place into a large mixing bowl.
Add cabbage, rice, pepper and pasta sauce - mixing well. Pour into a 13x9 inch (3 qt) casserole dish that's been lightly sprayed with non-stick spray.
Cover with foil and bake at 350° for 40-50 minutes or until rice and cabbage are tender. Uncover; sprinkle with cheese.
Bake uncovered 5-10 minutes longer or until the cheese is melted.
Serves 6-8 people (with a salad) for dinner.
