It's summertime and the grilling is easy. OK, the birthdays are over and our Seventh Wedding anniversary is coming up tomorrow, so what better way to celebrate than using an easy grilling recipe (oh, and this time happens to be Father's Day, too!)
Kielbasa comes in ropes and you need a good pound of it, but if you don't find it, you can always use 8 smoked link sausages (should still be a pound) cut into 3 pieces each.
Grilled Kielbasa Kabob Sandwiches
Ingredients:
1 pound rope kielbasa sausage (should be fully cooked already)
16 cocktail onions
16 mushroom caps
Sweet Baby Ray's barbecue sauce
8 hot dog buns
8 small sweet pickles
Directions:
Cut kielbasa into 24 equal sized pieces.
Thread 8 oiled skewers with ingredients as follows: sausage, onion, mushroom, sausage, mushroom, onion, sausage.
Grill over hot coals, basting kabobs with barbecue sauce and turning them over every 2-3 minutes. It will only take 6-9 minutes to complete cooking.
Serve in the hot dog buns with sweet pickles on the side.
Yield: 8 kielbasa kabob sandwiches.
Note: if all you can find is uncooked kielbasa, no worries. Prick kielbasa with a fork and place into a stoneware baking dish, cover with foil and bake at 350°F until the internal temperature reaches 165°
