Oh boy - this one takes me back to my childhood - Granny made pimento cheese when she could. Usually to take to a church dinner of some sort - and usually gone before we left to come home. Sigh!
Pimento Cheese
3 - 4 oz cream cheese, softened
16 oz shredded cheese - 8 oz sharp cheddar and 8 oz colby (or colby-jack or pepperjack, for a kick)
4 oz jar chopped pimentos
1/4 cup finely chopped sweet onion
3/4 cup mayonnaise
1/4 cup sour cream
salt and black pepper
In the bowl of your mixer, beat cream cheese until fluffy. Add shredded cheese, pimentos (including liquid), onion, mayonnaise and sour cream. Beat at medium speed, with the paddle until thoroughly combined. Season to taste with salt and black pepper.
Kick it up - Gourmet Pimento Cheese - add cooked crumbled bacon to the mix - substitute thinly sliced green onion for the sweet onion.
Serve with crackers, celery, pita chips. Make into sandwiches and cut into triangles.
My favorite lunch? A grilled pimento cheese sandwich.
